Where is our oil coming from?
Our Organic Extra Virgin Olive Oil is grown and harvested in San Benito County, which is known for its golden hills, the Gabilan and Diablo Mountain Ranges. San Benito County is located in the Central Coastal Mountain Range Area, bordering Santa Clara County, and frequently associated with Monterey Bay and Santa Cruz. Cool ocean air regulates temperatures, resulting in warm summers and mild winters, which makes it an ideal farming area.
What kind of olives are grown to produce our oil?
The Koroneiki Olive originated in Greece. They are a smaller variety of olive, rich in antioxidants. They have a unique flavor characteristic of a green banana, but can also be peppery and slightly bitter due to the high level of polyphenols (polyphenols help to improve lipid profiles, blood pressure, insulin resistance, and systemic inflammation).
The Lucca Olive itself was developed at the University of California, Davis by Professor Hartman. It is characterized by the crescent moon shape. The Lucca has a sweet, mild buttery flavor with nutty undertones.
The Arbequina Olive originated in Spain and is knows for the sweet almond like flavor. The Arbequina has a high amount of antioxidants, polyphenols, and oleic acids, which can help to reduce bad cholesterol and increase the good kind.
What is the Flavor Profile of our Oil?
Our 2023 Early Harvest oil is a lovely mild green color due to the high levels of Chlorophyll in early olive development. It has a rich green pungent peppery flavor, making it a perfect low temperature cooking oil.
